Broccoli & Bacon Breakfast Burrito
It’s the weekend!!! Breakfast makes me happy! Discovering leftover steamed broccoli in the fridge inspires me… This morning it shall be Broccoli & Bacon Breakfast Burrito. Super simple and by adding a few fresh herbs and seasonings….super delicious! Of course bacon never hurt flavor either. After browning the bacon in a medium skillet and pouring off the drippings I sauteed onion slices until tender, then added a handful of steamed broccoli florets, fresh lemony thyme, a pinch of Mrs. Dash Garlic & Herb seasoning, and a little salt & pepper.

Green Bean Casserole {Deconstructed}
Finding these gorgeous Haricot Verts at the Farmers’ Market warranted a special recipe. Something just as fresh with flavor as they are. Hmm…green beans, first thing that came to mind is Green Bean Casserole. Not envisioning the from a can variety but instead a bed of creamy mushroom & thyme sauce, topped with these vibrant green beans, sprinkled with crispy onions and shaved Parmesan cheese. Now that could be amazing.

Chicken Parmesan {Share the Love}
Chicken Parmesan over pasta makes me comfortable and happy. Today I delivered it to a friend with hopes it does the same for her :) Chicken breasts, lightly breaded, pan browned, topped with a basic tomato sauce, mozzarella & Parmesan cheese. Easy comfort.

Lemony Thyme Orzotto {Featuring Roasted Cushaw Squash}
Let me introduce you to the Cushaw Squash, pictured on the right. Thanks to the generosity of our wonderful new co-worker Cindy, several of us came home with one of these big beauties. What we were told is the cushaw is a wonderful alternative to pumpkin and is often used in pies. Never passing on free home grown produce, I picked the biggest one from the bushel that I could carry. A pattypan squash is the perfect delivery vehicle for one of my favorite food groups, Stuffing. We will stuff these beauties with wild rice, fresh veggies, sage, and sausage. Zucchini, Summer Squash & Tomato Gratin
Every booth at the Farmers’ Market yesterday was bursting with tomatoes and squash, and I just can’t say no. I even tried to buy just 3 ears of corn and the lady next to me said who does that….get a dozen, I did. So after visiting with 10 or so farmers, I had more than I could carry or possibly eat this week. No worries, with an office full of veggie eaters we’ll just share the love.
