Pecan-Crusted Trout
The trout was so fresh and beautiful at the seafood counter today that I couldn’t resist, even without a plan for how to prepare it. Pan sautéed trout is what first came to mind. I have a weakness for this wonderfully mild fish, especially when it’s sautéed in butter. To kick it up I decided on Pecan-Crusted Trout, which fit right in with our low-carb eating.

Pecan Salmon Caesar Salad. This is such a wonderful weeknight meal. Simple fresh ingredients that come together with ease. Glorious maple pecan encrusted salmon over a bed of crisp romaine with hard boiled eggs, fresh tomatoes, homemade croutons and shaved Parmesan cheese. As delicious as you could find in a restaurant, enjoyed in the comfort of home.

Toothacher Bars. The name would indicate overly sweet and decadent, however these bars are so much more than that. Chocolate, caramel, and pecans make them decadent yes, but an oatmeal crumble base and topping is what makes them spectacular!!

For as many years as I can remember there have been Walkers Shortbread Cookies in my Christmas Stocking. I love them. Worship them actually.

Sage-Pecan Pesto Encrusted Turkey Tenderloin
When I first made Sage-Pecan Pesto Encrusted Turkey Tenderloin and posted a picture in my What’s for Dinner album, I got immediate requests for the recipe. I love pesto. It’s so versatile and easy going. Never complains when you substitute sage for basil, pecans for pine nuts, aged cheddar for Parmesan. And turkey tenderloin is the perfect delivery vehicle (pork tenderloin would be delish too). So good and so moist!
