When we were growing up, one of mom’s signature party appetizers was Cocktail Franks in Red Currant Chili Sauce. We loved them. I hadn’t thought about them in quite some time until I spotted these little beauties at the market. There was no way I was leaving without them. And so we shall have Red Currant Chili Glazed Salmon over Israeli Couscous with Spinach.

I’ve chosen Salmon Marbella, because in a round about way, this dish brought us together. Lemony Thyme was actually the inspiration for this dish….which feels kind of cool. Coming off a full week of Eat Out of the Fridge/Pantry we treated ourselves to a nice big piece of salmon. We tossed ideas back and forth on how we would prepare it but made no progress. Whether we prepare the beautiful recipe above from Food & Wine or a little no fuss version, you can turn a nice big salmon fillet into a mouthwatering meal. It’s not often that there is any leftover but on this occasion we will take advantage of that for breakfast or wait is this dinner? Either way Salmon & Baked Eggs makes a delicious meal.

Salmon & Snow Pea Pasta with Tarragon Cream Sauce. Doesn’t that just sound so creamy and delicious. It was. I’m not sure who decided that Salmon & Peas are two peas in a pod…but I’m right there. I know I can’t claim everything as comfort food but….buttery baked salmon, mild snow peas, pasta tossed with an ultra creamy tarragon sauce….muah!!

Salmon Burger on Toasted Onion Roll
It’s Monday. Honestly I did not have a What’s for Dinner plan until leaving work at 5:30 pm. Salmon is always a favorite go-to protein for us and readily available. It’s the “if all else fails, we can always have Salmon” and we know it will be a good meal. I recently tried something new with Salmon ~ Salmon Meatballs. They were so moist and flavorful and pop in your mouth get me another good that we had to revisit that recipe.
