After all, as the story goes, that’s exactly how this world-famous salad came to be back in 1934. Pan Roasted Brussels Sprouts {with Orzo & Bacon}. Thought I’d take Roasted Brussels Sprouts in a little different direction, by pan roasting them, then tossing them with crispy bacon and orzo, and topping with toasted panko breadcrumbs. I’m really glad I did.

Cool Ranch Jalapeño Poppers {just for fun}
We found the nicest bag of jalapeños at our wholesale club on Saturday and decided to try our hand at making Jalapeño Poppers. As we worked our way through the store we talked about how me might change them up. We could stuff them with sausage, kind of like Stuffed Poblano Peppers. I threw out a bacon wrap, but somehow doubling up on the pork….seemed wrong.

Mushroom, Spinach & Herb Couscous
I am a huge fan of couscous and an even bigger fan of changing it up each time we make it. For Mushroom, Spinach & Herb Couscous, I add diced fresh mushrooms, and sliced scallions to the cooking water, along with a tablespoon of olive oil, a teaspoon of fine chopped fresh lemony thyme, and about a 1/2 teaspoon of Mrs. Dash Garlic & Herb seasoning.

Look at these for just a moment. They are red currants and tonight they are recipe inspiration. When we were growing up, one of mom’s signature party appetizers was Cocktail Franks in Red Currant Chili Sauce. We loved them. I hadn’t thought about them in quite some time until I spotted these little beauties at the market. There was no way I was leaving without them.
