Shrimp Po Boy. Oh Boy! The words ‘Fried Shrimp’ drifted through the office the other day. I could hear the excitement build, as one by one people shared their love of fried shrimp. Boy wouldn’t I love a nice big plate of succulent fried shrimp. Better yet, wouldn’t I love a nice big Shrimp Po-Boy.

Two ingredients, so much flavor. Grilled Bacon Wrapped Shrimp. Two things you can generally find in our freezer are bacon and shrimp. Bacon because we use it to add flavor to many dishes, but don’t often eat it as…well bacon. We keep frozen shrimp on hand for easy week night meals or in case we’re invited to an impromptu gathering and need a quick & tasty appetizer. Grilled Bacon Wrapped Shrimp is just that. We’re open to invitations.

Deconstructed Shrimp & Grits ~ One small bite at a time. I’m not sure where to begin with this one. I was fumbling around the kitchen one Saturday afternoon, clearly making no headway on dinner. An ensuing melt-down in the making (doesn’t happen often but apparently there are precursors). To head it off, I was given a challenge. “Forget dinner. You have one hour to create an appetizer, something you’ve never made before. Then we’ll decide about dinner.”

When someone shares what THAT dish is for them….it peeks your curiosity. Bonefish Grill’s Bang Bang Shrimp might just be THAT appeTEASER that keeps you going back. That was good enough for me. There are those dishes on a restaurant menu that create a stir and keep you coming back. Remember when the Blooming Onion blossomed on the Outback menu….what a craze. Have you ever been tempted to go to Red Lobster…just for the Cheddar Biscuits? Or raced straight from work to Chili’s for an order of their Southwestern Eggrolls (and a Presidente Margarita)?

Cilantro Lime Shrimp & Avocado Tostadas {Weight Watchers}
It’s funny how one abundant ingredient can spark all kinds of recipe inspiration. For us, it’s what seems to be a never ending bag of Corn Tortillas taking up space in our fridge drawer. Thumbing through my cookbook rack yesterday, I came across my Weight Watchers cookbook and well, let’s just say we may need to visit a couple of these recipes heading into the holidays ;) Tonight we’ll start by adapting a WW Shrimp Tostadas recipe.
