Earlier in the week, we began discussing what we would cook on Super Bowl Sunday. All the foodie websites and fb pages were alive with recipe ideas and exchanges. The possibilities ranged from good old favorites like wings and nachos to the more exotic Salmon Wraps and Filipino Spring Rolls. I had every intention of hosting a virtual Super Bowl Party on my fb page, even planned a week of recipes and posts centered around that theme. Recipe inspiration…hmmm toss up between one of those amazing Artisan Grilled Cheese Sandwiches (which almost implies healthy…hehe) and an unused hunk of Brie in the cheese drawer. This wonderful soup, that we’ve been eating for the past two days, could be made with almost any ingredients….so long as there’s a Ham Bone in the soup pot. And no matter how skilled you are at carving a ham, there is always extra meat still on the bone.

Spinach & Mushroom Stuffed Turkey Tenderloin {Applewood Smoked}
I woke up today, recognizing I was feeling really good in my pj’s and realizing my fridge had a mixed bag of unused (although thoughtfully selected) ingredients. It’s been one of those weeks….the kind that kicks you in the butt and says snap out of it. Still in my pajamas as I write this post, I am preparing Spinach & Mushroom Stuffed Turkey Tenderloin. Never left the house ergo never entered a grocery store = Winning!! And yes, I’ve snapped out of it.

Baked Cod with Montpellier Butter
Cod is a wonderfully mild white flaky fish. It’s happy seasoned with anything from fresh herbs to punchy marinades. It’s beautiful baked or grilled and when leftover it begs to be the star in a batch of fish chowder. After recently learning about freezing fresh herbs in butter or olive oil, I began to do a little compound butter research and decided Montpellier Butter would be the perfect pairing with our baked cod.

I am loving my new star ingredients from Oli+Ve, Blackberry Ginger Balsamic Vinegar. In fact I’ll be back for refills this weekend. Whenever I have the opportunity to cook for a group, small or large, I love to try something new. It’s risky (if it flops) but measuring the mmmm mmm good tells you best whether it’s a keeper or history.
