Marinara Sauce {with Fresh Tomatoes}
I have been on a Marinara Sauce kick these past couple of weeks. I call it a kick because I’m still a bit shocked that we are becoming quite the homesteaders. Well no we didn’t grow these tomatoes, but we did roast them, turn them into sauce and freeze them for the winter. That’s a long way from opening up a jar of our favorite sauce.

Masala Egg Toast
We rarely have a loaf of bread on hand, except when it’s tomato season. So for brunch today I went with a savory French Toast recipe that incorporated fresh herbs, tomatoes, and Indian spices. Masala Egg Toast might be a new favorite.

Tomato Bacon Jam
This has been my Summer of Jam. In years past I had avoided making jams and jellies simply due to my lack of understanding of the canning process. However, once I discovered how easy it was to make skillet jams the creative juices began to flow. Strawberry Jalapeno and Peach Jalapeno Skillet Jams gave me the confidence to take on Tomato Bacon Jam.

Tomato & Cheese Fondue
My first experience with fondue was in the mid to late 70s while visiting New York City. Mom took us to a trendy new restaurant called The Melting Pot. Fondue was the hottest craze to hit the restaurant scene. We gleefully dipped breads, meats, and seafood into broths and cheeses. As a kid this might have been the coolest dining experience in my entire 12 year life.

Tabouleh & Couscous Salad
I’m not sure why I’ve waited so long to make homemade Tabouleh. It’s packed full of fresh herbs and aromatics, my absolute favorite way to enhance flavor. Today, I introduced this dish to several friends, who I think now also share my love of this Middle Eastern salad.

Monterey Loaded Nacho Fries
I know for many families Friday is Pizza Night. At our house we’ve been toasting the end of the work week with a cold beverage and a tray of Nachos. Last Friday we made a big pan of roasted corn & poblano nachos with sausage and queso fresco. They were amazing. Tonight it’s Monterey Loaded Nacho Fries, inspired by our crazy good Monterey Chicken recipe.

Ceviche {with Halibut, Scallops & Shrimp}
We celebrated Shelby’s birthday last evening. When I asked her what she’d like for dinner she said “one of your amazing Ribeye steaks.” To which I gladly obliged. I wanted to come up with a fun and light appetizer to start us off. I remembered a time when Shelby and I met for lunch at a Mexican restaurant in town. As soon as we sat down she said “you’ve got to try their Ceviche.” I had no idea she shared my love for this chilled seafood salad.

Italian White Bean Dip {with Homemade Pita Bread}
I have a treasured folder where I keep paper copies of recipes. Some jotted down on scratch paper, others torn from magazines, and lots printed from the pages of fellow bloggers I admire. This morning I found this Italian White Bean Dip recipe that I had torn from a Weight Watchers hand out….months ago. Time to revisit.

Monterey Chicken Grilled Cheese Sandwich
Why not turn this favorite chicken recipe into a grilled cheese? If I can put Spaghetti & Meatballs into a grilled cheese, Monterey Chicken seemed like a natural. Grilled chicken breast with smoky hickory bbq sauce, crispy bacon, lots of cheese, sliced tomato and diced jalapeno & scallion….sounds amazing right?
