Crispy Chicken Legs {with Sweet Tomatoes}
I woke up early this morning, reached over for my phone to do a little surfing. I think I’m finally convinced that my fb newsfeed is equivalent to other’s ‘Google news balanced by Drudge…daily news.’ Don’t shake your head. When I make Crispy Chicken Legs with Sweet Tomatoes, because my friend Jamie Oliver suggested them, you will surely acknowledge that social media….ain’t all social. There’s great stuff out there.

Cheese Scalloped Corn Casserole {and an excerpt from The Moulding Board}
I was feeling a little sentimental and decided to pull out my treasured family cookbook, The Moulding Board. Included are recipes dating as far back as the early 1900’s intermixed with pages from my Great Grandmother Nannie’s 1929 diary. Such a wonderful way to get a glimpse of what life was like in Newtown, CT all those years ago. Now on to the Cheese Scalloped Corn Casserole recipe, which happens to be my sister Sarah’s contribution to the collection.

Shrimp & Summer Vegetable Farro Salad
Shrimp & Summer Vegetable Farro Salad. Farro. Do you know it? I just discovered this beautiful grain and am a bit smitten. Besides it’s slightly nutty flavor and wonderful texture which I adored, it’s also high in fiber and packed with vitamins and magnesium (which has health benefits of it’s own, especially for women). Now combine Farro with fresh summer veggies and protein packed shrimp and you’ve got a power meal that will keep you satisfied.

Pepperoni Pizza Grilled Cheese Sandwich
Pepperoni Pizza Grilled Cheese Sandwich. I’m in a bit of a quandary. I’ve made the decision to improve my health by making some small changes. No fads or gimmicks. No big investments. I’m following the plan that has worked for me in the past. Eat right and exercise knucklehead. Pretty simple concept, that over time never seems to fail. I started on the plan three weeks ago today and I can’t tell you how much better I feel.

Romesco Sauce
Presenting Romesco Sauce. Think roasted red pepper pesto. It’s nutty, with big bold flavors and is so versatile. This sauce can be served on pasta, as a dip for fresh veggies, or as a spread on sandwiches. But where we see Romesco really shine is when it’s paired with seafood.

Smoky Shrimp Diablo {with Baked Eggs}. We’re dabbling with some new recipes. Full of flavor and of course fresh herbs. I ran across a recipe for Baked Eggs in Smoky Tomato Sauce…which became the base for this fabulous recipe.

Eggplant Parmesan Stacks
Eggplant Parmesan Stacks. I won’t pretend this is anything more than an attempt to sneak another Eggplant Parmesan recipe onto the pages of Lemony Thyme. I want us to have options after all. And they are kind of fun all stacked up and pretty.

Homemade Fresh Tomato Juice {Vegetable Juice}
Homemade Fresh Tomato Juice. When you’re craving a Bloody Mary with brunch and you’re in your pj’s with no intention of removing them anytime soon and there’s zero tomato juice in the house…

Caprese Grilled Cheese Sandwich
Caprese Grilled Cheese Sandwich. We had to do it. You know we’ve got basil growing faster than a speeding bullet. Add a ball of fresh mozzarella able to leap tall buildings in a single bound. And an Italian bread getting eaten faster than a locomotive…I must act quickly.

Salmon with Roasted Vegetable Orzo
Salmon with Roasted Vegetable Orzo. Sharing a nice simple dinner we enjoyed recently. Not much to the recipe, but sometimes a little inspiration is all you need. Have fun with it. Season your salmon the way you love it, roast it with a few of your favorite summer veggies, and serve over a bed a orzo pasta.
