Flash backwards to January, NFL Playoffs were underway and I was itching to host a Super Bowl Party. I decided to make this Taco Salad with Doritos recipe, in honor of my favorite Super Bowl Commercials, and share it on Lemony Thyme the week before the Big Game. That was the plan. Kefta Mkaouara {Moroccan Spicy Meatball & Tomato Tagine with Poached Eggs}
I wanted to share one more Winter Thyme Spice Exploration dish before I mentally checked into Spring. When I discovered Kefta Mkaouara, a traditional Moroccan tagine dish, it offered all the right components. Lovely spices, fresh herbs, wonderfully seasoned mini-meatballs, and poached eggs all slow cooked in glorious tomato and olive sauce in our new Tagine. Beautiful.

The Jarlsberg BLT with Fried Egg
At our last family pot-luck gathering, my sister-in-law brought a crock full of the most glorious cheese dip. Jarlsberg Cheese Dip to be exact. She served it cold with a sliced baguette. I’m sure I never let it out of my sight or reach for the entire evening hour before it was devoured for it’s heavenly goodness. She shared that she had bought this tub of love at her local Kroger supermarket. I promptly sought out the closest Kroger and bought 2 tubs (plain and jalapeno) and a baguette.

The first time we made African Chicken Peanut Stew was the day Shelby and I discovered Penzey’s Spices. I bought three spices that day, cumin seeds, coriander seeds, and cardamom seeds. You see, earlier that morning I had read my first ‘non-family/friend’ comment on Lemony Thyme. It’s hard to explain the feeling but I was a titch giddy. Perhaps it’s like being in high school and having a crush on the most popular kid in school, who doesn’t even know you exist. Then one day, out of nowhere, they greet you by name. What?! Salmon BLT Salad {with Avocado Aioli}
I realize that a Salmon BLT Salad with Avocado Aioli is not much of a recipe. And possibly not worthy of a post. However, it was really good. And the fact that it was very basic, down to packaged croutons…made it about the best thing we had eaten in at least 3 days.

The Wedge Salad {and Grinching Away Christmas}
Today’s the day. The day I dread each January. Taking down the Christmas decorations, or as we call it….Grinching Away Christmas. Every year I procrastinate. Drag it out until the very last minute. The house just doesn’t feel the same without them. The lights of the tree warm the room and my soul. I hear trips being made to the basement….this is really going to happen today. Ugh! Can we just have a Wedge Salad instead.

Huevos Rancheros {Kind Of}
While these aren’t near authentic Huevos Rancheros, they are a nice twist on those wonderful Mexican Ranch Eggs. I tossed onion, zucchini, and cherry tomatoes in olive oil, oregano, salt and pepper and then roasted them for about 20 minutes until the onions were tender and the tomatoes began to burst. This mixture took the place of the traditional tomato-chili sauce and refried beans. You could substitute with whatever fresh veggies you have on hand, after all this is eat of the fridge/pantry week.
