I lay in bed Sunday morning pretending to be asleep. There was a steady rain tapping on the window, the kind that lulls you to sleep. It was not my morning to get up with the dogs (yet if I were already awake when the first bark came would it seem only reasonable that I take them out, even though I did the day before). These are my words, we’re not really score keepers. I justified my silent stillness by creating recipes in my mind. Savory Egg Stuffed Poblano Peppers nestled on a bed of enchilada sauced white beans. I did not take the dogs out.

Sausage & Thyme Cassoulet
I made a really good Sausage & Thyme Cassoulet. I filled it with spicy Italian turkey sausage, carrots, sweet potato, kale, onion, tomatoes, garlic, and lots of fresh thyme. A nice slow cook turned all those flavors into the heartiest of healthy meals.

Roasted Veggie & White Bean Chowder
Hanging on to every fresh produce summer moment over here on Lemony Thyme. I’m calling this soup Roasted Veggie & White Bean Chowder because it has a creaminess about it and chowders are amazing. The beautiful thing is the creamy came from the white beans not cream or butter. That puts this soup squarely in our Healthy Choices category.

I have a treasured folder where I keep paper copies of recipes. Some jotted down on scratch paper, others torn from magazines, and lots printed from the pages of fellow bloggers I admire. Italian Bean Soup with Mini-Meatballs {Pasta e fagioli inspired}
Italian Bean Soup with Mini-Meatballs. I intentionally did not call this a recipe for Pasta e fagioli, although it was clearly my inspiration. Pasta e fagioli is traditionally a meatless dish, comprised of pasta and beans in a tomato base. When I did my standard recipe research I had a hard time avoiding the bazillion copycat recipes for Olive Garden’s Pasta e fagioli. We may be the only family I know who has not had a bowl of Olive Garden’s Pasta e fagioli. I’m sure it’s delicious but I chose not to compete with the masses.

Warm 7-Layer Salad {or is it 8-Layers}
This Warm 7-Layer Salad is addicting and gorgeous. There’s so much going on here. Layers and layers of going on. Every bite is unique and delicious. All credit to Rachel Ray for this fabulous recipe. I must admit I was a bit skeptical the first time we made it, but once we took the first bite we were all in. That may have something to do with the wonderful bacon flavor infused throughout the layers.

Provençal Chicken is a wonderful weeknight meal. It’s light and full of flavor. Did I mention all you do is add the ingredients into your slow cooker, set it on low and go out the door and start your day. When you and your family arrive home 8 hours later….well let’s just say you’ll move up a notch on your way to rock star status.
