Turkey Piccata {with Mushroom, Spinach & Herb Couscous}
Jennie-O’s Ground Turkey, Italian Turkey Sausage, and All Natural Turkey Breast Tenderloins are all staples at our house, especially when we’re in Healthy Living mode…which is probably in order more often than not :) I originally made this Turkey Piccata recipe a couple years ago when I was a die-hard Weight Watchers girl. This dish has no lack of flavor but by simply exercising portion control AND measuring the added fats (as in measuring spoon) it can be a very figure friendly meal.

Peruvian Chicken. When my co-worker Cindy told me she had a recipe that was right up my alley…I listened. She knows me. Peruvian Chicken she promised was packed full of incredible make-you-get-a-little-giddy flavor…and wouldn’t you know this recipe is just in time for Winter Thyme Spice Exploration. She really knows me.

Salmon Marbella {Over Toasted Israeli Couscous}
I’m so excited to be sharing this recipe with my new friend and fellow food lover Sandi-A New York Foodie. She’s invited me to do a guest post on her blog, which will be a first for me. I’ve chosen Salmon Marbella, because in a round about way, this dish brought us together. Lemony Thyme was actually the inspiration for this dish….which feels kind of cool. Coming off a full week of Eat Out of the Fridge/Pantry we treated ourselves to a nice big piece of salmon. We tossed ideas back and forth on how we would prepare it but made no progress.
