Vanilla Rum Balls
Vanilla Rum Balls.
It’s never too soon to start planning your holiday baking. I’ve been testing out a few recipes on my work family and these Vanilla Rum Balls will definitely make the cut.
Crushed vanilla wafers are blended with pecans, confectioners sugar, cocoa, honey, water and rum. The mixture will have a coarse texture but can easily be packed and rolled into balls.
Once rolled, you can dip the rum balls in powdered sugar or finely chopped pecans or as I attempted….finely chopped white chocolate. Yes, I said attempted. I really thought the white chocolate was brilliant.
Right up until I tried to roll the balls in it. Using my warm hands to help coat them wasn’t the best idea. It seems chocolate does melt in your hands :)
These were delicious. I can say with certainty that I’m quite fond of Vanilla Rum Balls. They will make a wonderful addition to our cookie trays when we {Share the Love} for the holidays.
Vanilla Rum Balls
Ingredients
- 2 1/2 cups crushed vanilla wafers about 75 wafers
- 1 cup ground pecans
- 1 cup confectioners’ sugar
- 3 Tbl. baking cocoa
- 1/4 cup rum
- 3 Tbl. honey
- 2 Tbl. water
- 2 white chocolate baking squares 2-ounces, very finely chopped
- additional confectioners sugar
Instructions
- In a large bowl, combine water crumbs, pecans, confectioners’ sugar and cocoa. Combine the rum, honey and water; stir into crumb mixture.
- Shape into 1-inch balls. Roll in white chocolate or confectioners’ sugar. Store in an air tight container.
- Yield 3 1/2 dozen.
