Ingredients
  

  • 1 cup cooked chicken chopped
  • 1/4 cup low fat mayonnaise
  • 1 tsp. curry powder
  • 2 Tbl. sliced almonds
  • 2 Tbl. pomegranate seeds
  • 1 scallion sliced
  • sea salt & freshly cracked pepper
  • 1 avocado

Instructions
 

  • Combine mayonnaise and curry powder, then fold in the cooked chicken, sliced almonds, pomegranate seeds, and scallion. Season to taste with salt & pepper.
  • Slice avocado in half and remove pit. Divide chicken salad into each half and serve.
