Grilled Chicken Tequila Burgers

These burgers are packed full of flavor and got a thumbs up at our house!
Course Burgers

Ingredients
  

Burgers...

  • • 1 pound ground chicken breast
  • • 1 Tbl. olive oil
  • • 3 Tbl. chopped fresh cilantro
  • • 2 chopped garlic cloves
  • • 1 seeded and chopped jalapeño pepper
  • • 1/2 cup panko Japanese breadcrumbs
  • • 2 Tbl. tequila
  • • 1 tsp. lime zest
  • • 3/4 tsp. salt
  • • 1/2 tsp. pepper
  • • 1/4 tsp. soy sauce
  • • Sliced tomatoes
  • • Sliced onions
  • • 4 hamburger buns

Cilantro-Lime Mayonnaise...

  • • 3/4 cup mayonnaise
  • • 1 tsp. chopped fresh cilantro
  • • 1 tsp. chopped fresh chives
  • • 1 tsp. lime zest
  • • 1 tsp. fresh lime juice

Instructions
 

Burgers...

  • Preheat grill to 350° to 400° (medium-high) heat.
  • Pulse ground chicken, olive oil, cilantro, garlic, and jalapeño pepper in a food processor 3 to 4 times or until combined.
  • Add panko, tequila, lime zest, salt, pepper, and soy sauce; pulse until combined. Shape into 4 patties.
  • Grill chicken patties and onion slices, covered with grill lid, 4 to 5 minutes on each side or until a meat thermometer inserted in thickest portion registers 165°; remove from grill.
  • Serve burgers, tomato slices, and onions on buns with Cilantro-Lime Mayonnaise.

  • Combine all ingredients and chill.
