Pulverize Oreos and combine with cream cheese. Add coffee extract and mix, by hand. Roll into 1-inch balls and place on parchment lined baking sheet. Chill for 30 minutes before dipping.
Melt dipping chocolate, according to package instructions. Dip each truffle ball in chocolate, then top with sprinkles. Place on parchment lined baking sheet. Chill 10 minutes.
