Quick Greek Red Wine & Feta Vinaigrette

If you’re looking for an easy way to elevate a simple salad this feta & red wine vinaigrette is the answer!

Course Dressing

Ingredients
  

  • 1/2 cup extra virgin olive oil
  • 2 Tablespoons red wine vinegar
  • 1 zest of one lemon
  • 1 shallot
  • 1 clove garlic
  • 2 Tablespoons fresh oregano leaves
  • 1/4 cup fresh basil leaves
  • 1/4 cup feta cheese
  • salt & pepper to taste

Instructions
 

  • Combine all ingredients except feta, salt & pepper in bowl of a food processor. Purée. Add in feta and pulse until creamy, but with small pieces of feta still visible. Season with salt & pepper to taste.
